Open Fire

For Kiln / Directed by

One Saturday service across Kiln's two London kitchens, filmed from the pass outwards, as the cooks feed four hundred people over open flame.

Kiln cooks everything over fire, and Samir wanted the film to feel like standing too close to it. We filmed one Saturday service across both of their London kitchens, start to finish, with no staging, no retakes and no food styling.

Leo Hartmann worked with two cameras on short zooms, one fixed above the pass on a small slider and one handheld, moving through the line at the cooks' pace. The kitchens were left exactly as lit, with the flames doing most of the work, and we added a single soft panel over each pass so the plates would read. The shutter was opened to 270 degrees to soften the motion and stop the fire from strobing.

Mira Kowalczyk placed contact microphones under the grill and on the pass rail, so the soundtrack is the kitchen itself: tickets, pans, the extractor and the head chef calling the board. Ravi Mehta cut it in the order it happened, compressing four hours into three minutes without a single caption.
